Sweet Apple Poutine with Confinoix-Érable Copy

For a dinner that impresses without the fuss, here’s a flavourful recipe featuring local ingredients — including our delicious Confinoix!

Yield: 4 servings

Ingredients:

  • 2-4 chicken breasts (600 to 800 g)
  • 8 slices of prosciutto
  • 1 tbsp vegetable oil
  • 1 Quebec apple
  • 1 tbsp apple cider vinegar
  • 60 ml de Confinoix
  • 1 cup grated sharp cheddar cheese
  • Freshly ground pepper (optional)

Directions:

  1. Dice the apples and add the apple cider vinegar. Mix well.
  2. In a skillet, cook the apples over medium-high heat in the oil until golden. Add the Confinoix-Maple. Let the liquid reduce while stirring until almost completely evaporated. Let cool. Add the grated cheese.
  3. Preheat the oven to 375°F (190°C).
  4. Slice the chicken breasts in half horizontally, without cutting all the way through. Open them like a butterfly and fill with the apple, Confinoix-Maple, and cheese mixture. Add pepper if desired, then close the breasts.
  5. Wrap the breasts with the prosciutto slices and secure with butcher’s twine.
  6. Place the chicken breasts in a baking dish lined with parchment paper.
  7. Note: You can complete all the previous steps a few hours before the meal. If so, make sure to cover the chicken breasts well and refrigerate.
  8. Bake uncovered for 45 minutes.
  9. After removing from the oven, cover with aluminum foil and let rest for 5 minutes. Slice the chicken breasts and plate them.
