For a dinner that impresses without the fuss, here’s a flavourful recipe featuring local ingredients — including our delicious Confinoix!
Yield: 4 servings
Ingredients:
- 2-4 chicken breasts (600 to 800 g)
- 8 slices of prosciutto
- 1 tbsp vegetable oil
- 1 Quebec apple
- 1 tbsp apple cider vinegar
- 60 ml de Confinoix
- 1 cup grated sharp cheddar cheese
- Freshly ground pepper (optional)
Directions:
- Dice the apples and add the apple cider vinegar. Mix well.
- In a skillet, cook the apples over medium-high heat in the oil until golden. Add the Confinoix-Maple. Let the liquid reduce while stirring until almost completely evaporated. Let cool. Add the grated cheese.
- Preheat the oven to 375°F (190°C).
- Slice the chicken breasts in half horizontally, without cutting all the way through. Open them like a butterfly and fill with the apple, Confinoix-Maple, and cheese mixture. Add pepper if desired, then close the breasts.
- Wrap the breasts with the prosciutto slices and secure with butcher’s twine.
- Place the chicken breasts in a baking dish lined with parchment paper.
- Note: You can complete all the previous steps a few hours before the meal. If so, make sure to cover the chicken breasts well and refrigerate.
- Bake uncovered for 45 minutes.
- After removing from the oven, cover with aluminum foil and let rest for 5 minutes. Slice the chicken breasts and plate them.
