{"id":950,"date":"2022-02-15T18:42:21","date_gmt":"2022-02-15T22:42:21","guid":{"rendered":"https:\/\/www.joliesminoix.ca\/pesto-de-brocoli-et-noix-de-noyer-noir\/"},"modified":"2022-02-23T00:22:24","modified_gmt":"2022-02-23T04:22:24","slug":"broccoli-and-black-walnut-pesto","status":"publish","type":"post","link":"https:\/\/www.joliesminoix.ca\/en\/broccoli-and-black-walnut-pesto\/","title":{"rendered":"Broccoli and black walnut pesto"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<ul>\n<li>1 cup of broccoli florets + tender stems<\/li>\n<li>2 crushed garlic cloves<\/li>\n<li>\u00bd cup black walnuts<\/li>\n<li>2\/3 cup basil (pressed into the cup \u2013 a good big handful)<\/li>\n<li>1\/3 cup dried spinach (pressed into the cup)<\/li>\n<li>1\/3 cup olive oil<\/li>\n<li>1 lemon \u2013 zest and juice (about 2 tbsp of juice)<\/li>\n<li>\u00bd tsp. salt<\/li>\n<li>\u00bc tsp. pepper<\/li>\n<li>\u00bd cup grated parmesan or more, to taste<\/li>\n<li>Choice of pasta: spaghetti, linguine, fusilli, penne\u2026<\/li>\n<\/ul>\n<h2>Preparation<\/h2>\n<ol>\n<li>Steam broccoli until tender but not overcooked. Drain.<\/li>\n<li>In the food processor, mix garlic and walnuts until the walnuts are in small pieces (but not paste consistency). Add basil, spinach and lemon juice until the leaves are finely chopped. Add broccoli and mix.<\/li>\n<li>Add the olive oil, cheese, lemon zest, salt and pepper and mix with a mixer.<\/li>\n<li>Use about \u00bd cup of pesto for 225 g of pasta.
